We´ve been hand-screening several Pacamara lots here at the roastery lately. The Pacamara cultivar is a pretty large bean, and hand-screening these lots helps us ensure that we are using only the largest beans.

This process really helps us hone in on the flavor profiles we want to see from each of our Pacamaras.
